Blanc de Blancs means white wine from white grapes — in this case pure Chardonnay from the Jura, made by the traditional method and producing a wine of remarkable freshness and citrus precision. Lemon, green apple, a hint of almond and fine persistent bubbles that make it the ideal first glass of the evening. Light, elegant and entirely welcoming. Open this before anyone has sat down and watch the room relax on contact.

Montgermont NV Crémant de Bourgogne Blanc de Noirs Brut

Burgundy’s answer to Champagne — the most structured and satisfying glass before dinner.

Made entirely from Pinot Noir and Pinot Gris pressed without skin contact, Montgermont’s Blanc de Noirs carries the weight and vinous character of red grapes in a white sparkling wine — a deeper, more complex aperitif that pairs beautifully with charcuterie, cheese or simply the pleasure of waiting for dinner to be ready. Domaine Jean Vesselle Rosé de Saignée Brut NV

The serious closer — a saignée rosé from Bouzy Grand Cru that earns its place at any table.

Jean Vesselle farms Grand Cru Pinot Noir in Bouzy — one of Champagne’s most celebrated villages for the variety — and their Rosé de Saignée is made by macerating the skins to extract colour and flavour rather than simply blending in red wine. The result is a deeper, more structured rosé with genuine red fruit character, a vinous weight and a complexity that makes it as comfortable at table as it is in the aperitif hour. The final bottle of the committee’s session and entirely unwilling to let proceedings end before it’s finished.
