Sabon 2012 Prestige Châteauneuf-du-Pape is a blend of 70% old vine Grenache with 20% Syrah and 10% Mourvèdre, the wine is medium to full-bodied, pure and lively, with clean, classical aromas and flavors, solid concentration and soft, fine tannins. This ’12 frames its red and blue fruit with spice, smoked meats, and exotic spices; intense and concentrated, this wine is pure pleasure. This is an exceptional wine that will age beautifully for another decade. Roger Sabon is a traditionalist and prefers to age its wines in small oak barrels for six months, following extended time in tank. Sabon places great on elegance rather than power, and although the younger wines seem to tell you otherwise, they grow and gain in depth and complexity.
