Winemaker’s notes:
Parigot & Richard 2017 La Sentinelle Cremant Extra Brut is deep, bold and complex, but with a strong focus on freshness and minerality. The bubbles mature for 36 months like a vintage champagne, which is a 4 times as long ripening time as the rules require for a crémant.

La Sentinelle’s residual sugar level is 4 g / l – and is therefore a fantastic dry, crisp and creamy case. The bottles are unfiltered to achieve as much flavor and intensity as possible. The grapes come from the Côte de Beaune, the heart of Burgundy, and the vines planted in soils rich in lime and clay are between 20 and 50 years old.
Parigot & Richard has been making Methode Champenoise cremant in Savigny-Les-Beaune for five generations.
